Refreshing Pineapple Coconut Juice
A fresh take on the pina colada, this pineapple coconut juice is light, refreshing, and a perfect blend of quality ingredients for full island flavor.
Ingredients
1 Young Thai Coconut
coconut meat | 2 oz | 57 g | 1/4 cup |
coconut water | 6 fl oz | 177 ml | 3/4 cup |
pineapple | 9.5 oz | 269 g | 1/5 pineapple |
white or coconut rum (optional) | 1.5 oz | 43 g | 1 shot per serving |
Directions

Crack open and drain the water from a young coconut into a bowl or cup, set aside. Scrape out the coconut meat and weigh the meat and water.

Add both coconut water and meat to the blender and blend until smooth.

If you have a juice press, grind pineapple (keeping the skin on) and pour the coconut mixture over the ground pineapple, then press. If you don’t have a juice press, peel the pineapple and juice in your juicer, then mix in the coconut mixture.

For a pina colada-like cocktail, add 1.5 oz (1 shot) of white rum.

This can easily be made into a cold-pressed cocktail, just add some white rum (or alcohol of your choice)!

The coconut meat should be white and the water should be clear when you cut it open. If it is pink or purple tinted, it means it has gone bad and is no longer good.

Garnish the rim with pineapple slice and toss a leaf in the glass (as seen in the photos) to take your presentation up a notch.

Make this a mojito/pina colada hybrid by adding mint leaves (either by muddling in a cocktail shaker or juicing with the other ingredients) and fresh lime juice!
