Kale Tonic with Apple Cider Vinegar

Ingredients
green apple | 7.75 oz | 220 g | 1 1/5 medium apples |
cucumber | 3.7 oz | 105 g | 1/2 cucumber |
pear | 2.5 oz | 71 g | 2/5 medium pear |
kale | 1.8 oz | 51 g | 3/4 cups chopped kale |
lime | 1 oz | 28 g | 1/2 lime |
ginger | 0.35 oz | 10 g | 1 1/4 inch chunk of ginger root |
apple cider vinegar | 0.15 oz | 4 g | 1 teaspoon |
spirulina (green or blue) | 0.05 oz | 1 g | A little less than 1/2 teaspoon |
turmeric root | 0.02 oz | 0.6 g | 1/10 inch chunk of turmeric root |
Directions

Wash and weigh the produce.

Quarter the lime (leaving skin on) and place directly into the press. If you don’t have a juice press, peel the lemon and juice with the rest of the ingredients.

Grind remaining produce together and press.

Add the spirulina to a bowl, slowly pour some juice into the bowl (to avoid clumping) and whisk. Combine mixture with the remainder of the juice.

Add the vinegar to the juice.

Not sure what apple to choose? Fuji apples are a great choice, as they are known for their juicy and sweet flavor profile.

We used phycocyanin, an extract of spirulina, which is blue in color. If you want a greener juice, use the full spectrum (green) spirulina variety or chlorella.
