Dairy-Free Peppermint Patty Milk (or Coffee Creamer)

Ingredients
water (filtered) | 11.12 oz | 315 g | 1 1/2 cups water |
almonds (raw) | 4.5 oz | 128 g | 1 cup whole almonds |
dates (pitted) | 1.13 oz | 32 g | 5 dates |
cacao powder | 0.21 oz | 6 g | 1 1/4 teaspoons |
peppermint extract | 0.07 oz | 2 g | 1/2 teaspoon |
vanilla extract | 0.07 oz | 2 g | 1/2 teaspoon |
salt | 0.03 oz | 0.9 g | a small pinch |
Directions
24 Hours Before

The day before making this recipe, place the almonds in a container and fill with water to cover and soak in the refrigerator for 24 hours (max 48 hours). For the last hour of soaking, add the dates to the water so they re-hydrate. If you don't have the time to soak, you can whip up almond milk on demand with a premium almond milk base, which you can find on our marketplace.
If You Have a Juice Press

Drain the water from the almonds and dates, rinse and drain again.

Blend the almonds, dates, and cacao powder with the filtered water.

Add the slurry to the press bag, making sure the press bag is no more than one-third full to avoid overflow. Mix the slurry until most of the water is drained, then press.

Whisk the vanilla, peppermint and salt into the milk.
If You Don't Have a Juice Press

Drain the water from the almonds and dates, rinse and drain again.

Blend the almonds, dates, and cacao powder with the filtered water.

Strain the slurry over a bowl using a nut milk bag or cheesecloth (a thin dish towel can work in a pinch).

Whisk the vanilla, peppermint and salt into the milk.
Pro tips

This recipe comes out the best when making it in a larger batch, multiply the ingredients by the number of servings you want to make.

Nut slurry is high on the mushy spectrum, take special care to only fill the press bag to about 1/3 full to avoid overflow.

For the vanilla, you can use liquid extract, paste or vanilla bean. If using the bean, process 3 beans with the almonds and dates. We used a pure vanilla bean paste which is made from both vanilla extract and vanilla beans.
